Who invented It? Mr Walter Jenn, of Elk Grove, Ilea. In 1985, he was an immigrant to this country and brought with him a basic prototype of the sharpener, that he had seen in Germany. The Original Edgemaker was born 1986 how i do i sharpen my knives? You can take any knife you own, check the edge for sharpness, if you feel no edge at all, then start with the Blue Bevelmaker tmTool Place It on a secure surface, like your work bench or cutting board and put the knife between the two steels at 90 degrees or straight up,start with the heel of the blade and pull down between the sharpening steels,all the way down to the tip,be sure to press hard enough to flex the steels, slightly,you will hear, the blade being cut as the bevel is made, the noise will quiet slightly.,after a dozen of firm strokes, check the knife edge carefully. If not sharp enough , give another dozen or two good firm strokes, until the blade feels sharp. Then move down to the Orange Pro and continue on the Medium grit,,same procedure, then to the fine grit. If you want razor sharp, finish then use the Yellow Handy Honer tm, giving lighter strokes at the end, to polish off all the burrs, so that the edge will last. Q. It looks so simple, what makes It work? A. It is the power of leverage,the steels cross-over and when the knife blade is pressed firmly into this apex,creates cutting pressure from both sides,at the correct angle,simple but ingenious! This is a precision edge,because one- the angle on the knife-matches the angle of the steels- two It stops taking any metal off the blade-built in control-you can not take off excessive amounts of steel! Q. Why the 4 grits? A. Because of the laws of physics, when ever you cut steel, to make the bevel or angle on the blade. It leaves burrs,these burrs create a false edge,and while It may feel sharp It will not hold because of the false or wire edge. The way to get the burrs off,is to move down to a finer grit, ex. The Blue tool is semi course-you use this to cut a new bevel or angle or re profile the blade, once It is cut-to start the DE-BURRING process, is to switch now to the Orange Pro, and the medium grit,repeat the process, as above,each finer grit will de-burr or hone, the edge, so that the false edge is gone and the true,hard,dense edge is under- neath that wire edge. This edge is not only sharper, but will stay sharper longer, because you not using the false edge, Q. Will I have to use all 4 grits every time i sharpen my knives? A. No once you have used the system and all the bevels or angles are correct, and you knives are sharp, then with normal use, they just need to be re-honed,with the Yellow Handy Honer tm . Since the majority of the bevel is intact, and only the last tiny part of the edge is affected,this applies to rolled over edges too, Simply break out the Yellow Handy Honer tm and give the blade a dozen strokes under firm pressure and in seconds you have the razor sharp edge you are looking for. It's amazing. Q. Will i have to carry all 4 grits, that are in the 3 tools,out in the field>? A. No, prepare you knives as above and pack only the Yellow honer,,It weighs less than an ounce and is worth it's weight in gold, out in the field. What happens when wear out that one spot? On the sharpening steels? A. Easy, just rotate the steels, about one/eight of a turn, and your good for another few years per turn and their are eight turns,,so It will last a life time under normal household use. Q. How do i rotate the steels> A. Place the tool in hot water, not boiling, but hot, and leave It for a few minutes, 5 to 7 minutes should do It, take out carefully and pull the steel pins out, straight out,turn or rotate1/8th of turn, put It back in, do the same to the other, tap the ends of the steel rods, to seat them at their base,,and you are ready to go again, Out in the field I have used a zippo to heat the steels used my Leatherman, to pull the steels. Q. Will It really sharpen serrated knives? A. Yes the Edgemaker is the only system to sharpen serrated with out wearing down the serration's by using the ultra fine of the Yellow Honer, It is polishing the each individual serration one at a time as you draw the blade Dru slowly ( top angle, with the steel tips resting on the table, insert knife Dru the inside angle,,and draw back, in one direction, slowly, so you feel each individual serration's one at a time.. High repetitions,light pressure, slow speed, is the key Q. Is the Edgemaker safe for serrated blades like Spyderco,Gerber,Kershaw, Buck and the rest? A. Yes,right now i feel that this is THE best serrated edge sharpener,on the market today, truly state of the art. I have tested all the ways, to sharpen serrated knives,with everything i could find on the market,,It was no contest, since all the other sharpener that stated they could sharpen serrated edge, all work on the principal of abrasion,,that is wearing down the metal, none had a grit as fine as the Yellow Honer,the closest was 5 times more course! The secret is that It polishes the serration's, sharp without wearing them down,again amazing. What if the yellow grit doesn't make the serrated edge sharp? A. The the blade is beyond polishing sharp, and need to be honer with the fine grit,this is located on the Orange Pro,pebbled surface set of steels, not the grooved ones (medium) proceed as above, if It get sharp, then go back to the Yellow honer to finish, if not sharp move up to the medium. Then once sharp, move back down Dru the grits until you are at the Yellow honer (but in 19 years of sharpening thousands of serrated knives at shows, i have only gone to the medium a couple dozen times,) Q. On straight edge knives, how hard do i press? When i am drawing the knife down Dru the steels? A. Certainly hard enough to flex's the steels,,slightly,,when you press that hard,you insure that the blade is being forced into the apex, or where the steels cross, to make the leverage principle work. Q Why i have seen some instructions that say, do It lightly, don't force the blade and they talk about a taper? A. The truth is- It is both, first you press hard, then once the bevel is cut, the back off on the pres- -sure and give light stokes, then repeat Dru all the grits to get the effect of 8 grits!! Some one is just a little confused,they looked in the window,but weren't really part the party, taper is a type of grind, like a hollow ground, he was really talking about the bevel,,or the angle that is put on the blade to sharpen It. Easy to get confused unless your a pro. The EDGEMAKER system is based on primarily principal of "leverage" not like all the other sharpeners which are based on "abrasion" so to initialize the leverage principle the blade must be pushed hard enough to force the blade in the "apex" of the rods It is here that the leveraging power of the crossed steel rods-under pressure take place thus cutting a new bevel with a very high degree of precision!! The flex you see when you are pushing hard is a visual clue that you are doing It exactly correct!! Very hard to make a mistake - that is the heart of this system that has been so well accepted all over the world with millions of sharpeners being sold by the factory. Any other reason for the flex ?A. Yes, if you have seen some of the primitive type of sharpeners used in the past, especially the one with the guard over the fingers hand held It has to flat carbide blades very small and rigid so what happens is that you will get a "chatter" effect on the blade the flex solves this problem without It eventually a "roller coaster" effect can be seen on the knife edge especially softer steel like the carbon steel blades' What about the look-a-like sharpeners? A. Well, as you might imagine anytime you have a great new product invented-by a great mind and entrepreneur there are those low-life that try to copy or even "reverse engineer" the design we know these as "knock offs" , "pop outs "or counterfeits of which the Federal Trade Commission has the tasks of weeding out since this is a monstrous job-they move slow and you may be offered a cheap copy of our design. AVOID these at all cost. Not only do they not sharpen at all-they are actually dangerous to use since Edgemaker has the patent on the off set safety handle look for that handle. Accept no cheap substitutes. Speaking of cheap substitutes-what about the other cross steel sharpeners? A. Well, a little common sense will go a long way-when It comes to looking at these gadgets as opposed to the Edgemaker tool is they are flimsy -pick the gadget up- heft It is It cheaply made- with floppy steels. One gadget we see all the time at the shows is one cheapo that the actual owner of the company stands there and tells his potential customers that the floppy steels can be "shimmed" up with a nickel or coin placed between the steels. Ha ha, can you imagine that he can do that with a straight face?? If you run into one of these gadget booths at a show ask him this question. "Why not spend a nickel of your own and beef up the plastic instead of asking us to use "chump change" to shim up his shoddy product. Moral to the story: If you see this "chump" "change" your mind and do not buy It. How can I tell the good guys from the bad guys? A. Remember that the chump with the gadget will not give you a money back guarantee. He knows he would go broke quick if he did. Also look for the offset safety handle, since the patent is on the handle, they cant copy that,,the bad guys would rather sell you a gadget that is unsafe, ie no handle at all,,,,It was a good idea, but we but a handle on It! What is the bevel? A. It is the angle on both sides of the knife-both of these angles are the bevel What is the correct bevel or angle? A. Ideally It would depend on the knife and the type of steel and the job It was meant to do for example: a meat cleaver.......30 degrees a kitchen knife........22.5 " a filet knife..............18 " The standard "utility" or all around angle that is picked by the majority of the knife manufacturers is 22.5 degrees because It has a rather broad angle, thus It will hold up for a longer time than thinner angle like 20 or even 18 degrees and if this broad angle is honed or polished through at least 3 or 4 finer and finer grits It will hold an fantastic razor edge. Q. What is the primary angle? A. The primary angle is the initial angle or the bevel the factory put on the knife when they made the knife. What is the secondary bevel? A. The secondary bevel is the actual cutting angle It is this angle that all sharpeners work on . Are there more that one type of primary bevels that knife companies use? A. Yes, taper grind and hollow ground. The taper grind is primarily used on professional kitchen knives and the angle slopes from the back of the blade all the way down to the edge. The hollow ground knife has a second bevel closer to the edge that is "concave." Will the EDGEMAKER work on both of there types of grinds A. Yes, because both of these are "primary" bevels and all sharpening is done on the "secondary" bevels !! What about the white ceramic or "crock" sticks? A. Well the while sticks are actually "alumina oxide" and are actually colored coded white means "fine" and fine is used for honing or polishing so if you take a dull knife like a Buck or Gerber to a fine while stick you will be at It forever and will give up long before It would be possible to get any results. What about the set I have seen That has white and gray as well: A. That's a little better. The gray is rated as a "medium, grit and will help in cutting the bevel but remember you will have to do each side of the blade bevel separately. Unlike the Edgemaker, which does both sides at the same time, saving half the time, also these types work strictly on "abrasion" and will but heavy wear on the blade eventually wearing out the blade. Unlike the Edgemaker, using primarily "leverage" taking only just enough of the steel off to bring both sides to the correct angle then you lose the leverage and you cannot accidentally or on purpose take off too much steel on the blade. What about honing oil? A. Honing oil is used only on the old stones like corundum and Arkansas stones. The reason for the use of oil is because on these abrasive types stones the grit of the stone gets "plugged" up with the minute filings coming off the knife edge so by applying oil you will be "floating" the filings up and out of the pores of the stone so that the grit can still be abrasive to the steel. If you see any one using oil on steels It is really "SNAKE OIL" and is a cheap trick to give some validity by association to a gadget that really doesn't work. RUN don't walk from this "snake oil salesman." Why have I seen a gadget called a "honer" with a very course grit? A. A coarse grit "honer" is a oxymoron with the accent on the last syllable. Will the Edgemaker system work on Bucks, Gerbers and Kershaw type knives? A. Yes yes and yes. Since these are some of the hardest knives made ( approx 58 to 60 Rockwell "c" scale) compared to regular kitchen knives which run 35 to 40 on same scale. The tungsten carbide rods we use are rated at 72 Rockwell, thus the upper hand and the power of leverage i.e. The crossed rods puts edges on knives you have never been able to sharpened before. I have seen you at shows before and you sharpen the customers knives for them right on the spot why do you do this? A. Because, I can show them the technique on my knives I bring with me but until I put the edge on their knives-usually in less than a minute or two right there in front of them and these are some of the dullest pocket knives you will ever see so they know they are giving me a real test. In a five day show I will sharpen over 300 knives!!!! It is hard work to do that many but the proof is in the pudding and I give 'em a little puddin'. I noticed too that you usually show how sharp the knife is by cutting a piece of paper...why do you do this? A. Well, I usually go on to not only cut the paper but to lay the paper down on the desk and actually filet the paper to de-laminate It, so to speak. This paper is approx. 15 thousand of an inch to filet It or to split It is approx. 30 thousand of an inch!!! About the thickness of a human hair. Nothing but a super sharp knife will do this so the customer knows no tricks, no slight-of-hand here. It must actually BE sharp to do that, and I can do It with any knife that is handed to me, and the great part is so can the customer. When they take the Edgemaker home and we money back guarantee It to do that. Incredible!! Give me your honest opinion of the following types of sharpeners and gadgets on the market . A. O.K. Shoot What about the "sharpmaker from "Spyderco" A. Pretty good-it is what I called a craftsman style. That is It takes a while to learn how to use It correctly and It takes awhile to sharpen a knife with It. Approx. 20 minutes for a dull stainless steel knife. If you are a perfectionist and a craftsman and have the time try It . What about stones? A. We say come out of the "stone age" with these you have to guess the angle and flip the blade over and guess again. At best It is one guess against the other. In addition stones put severe wear on the blade and scratches up the knife. However some "therapeutic value" for those who are bored What about chef or butcher steels, like the one you get with a set of block knives? A. There is a lot of miss-information about this tool. First of all the reason that the knife companies add to the set of knives is that It looks good in there and gives you "perceived" value. Also It will work for a little while in that what a "chefs steel" does to 'raise up a burr' on the cutting edge. Old school meat cutters like a burred edge when they cut fat and gristle but the burrs wear out very quickly and if you notice someone who uses a chef steel they are constantly used the steel to re-burr the blade every few cuts sometimes! Once you have used the chef steel for some time It wears out the primary bevel and now It has to be reground or stoned on a series of 3 different stones. What about the one with the guard over the fingers? A. In the business that one is known as a "ripper" because It just peels he metal off the blade, very bad for you knives, this was originally invented to be a lawn mower blade sharpener in the early 1950's, and i mean push mower like the ones in the Smithonean Museum, if you own It all ready- use this only on garden tools! What about the "clamp and rod" systems?
